For the Green Dressing:
- 1/2 ripe avocado (creamy base, healthy fats)
- 1 garlic clove, minced (flavour, immune support)
- 2 tbsp fresh lemon juice (tangy flavour, vitamin C)
- 1 tsp anchovy paste (optional, umami flavour)
- 1/4 cup Greek yogurt (creamy texture, probiotics)
- 1/4 cup fresh parsley, chopped (fresh flavour, vitamin K)
- 2 tbsp chives, chopped (mild onion flavour)
- 2 tbsp tarragon, chopped (unique bittersweet taste)
- 1/4 cup extra virgin olive oil (heart-healthy fats)
- Salt and pepper to taste
Instructions:
1. Prepare the Salad Base:
