Ingredients:
- Krispr Baby Romaine Lettuce
- Chicken Breasts (Optional)
- Shredded Carrots
- Cucumber
- Rice Noodles
- Rice Paper Sheets
- Cilantro
- Rice Vinegar
- Sugar
- Favorite Dipping Sauce
Instructions:
- Cook the chicken breasts thoroughly and cut into 16 strips. Alternatively, use rotisserie chicken for convenience.
- Cut and wash Krispr Baby Romaine Lettuce leaves, discarding the stems. Peel the cucumber and slice into strips lengthwise. Shred the carrots.
- Mix rice vinegar with sugar. Divide the sweetened rice vinegar in half, adding half to the cucumber and half to the shredded carrot. Set aside.
- Cook the rice noodles in boiling salted water, then drain. Rinse immediately with cold water and drain again.
- Fill a flat dish with warm water (not hot) and place a rice paper sheet in the water. Lay it on a dry towel to remove excess water.
- Place the wet rice paper flat on a plate or cutting board. Be careful not to tear the paper.
- Assemble the ingredients on the rice paper, starting with Krispr Romaine leaf, chicken strips, cucumber, rice noodles, cilantro, and carrots. Be careful not to overfill to prevent tearing the paper.
- Roll the ingredients into the rice paper, making sure to tuck in the sides as you roll. Serve with your favourite dipping sauce and enjoy!
